Simple Lemonade
One of my favorite drinks is lemonade. It’s refreshing and invigorating and has endless combinations and styles. It’s a great alternative to soda or is a good option if you are looking for something more than water.
This is a recipe that I modified from a restaurant I worked at in high school. It is simple and can be adjusted to make any quantity and the juice and sugar can be adjusted to fit your taste.
For Valentine’s Day, my loving husband bought me a Meyer Improved Lemon (Citrus limon 'Meyer Improved') which had a few lemons already started on it. They were nice bright yellow and came off with a gentle twist of the fruit when they were ready to pick.
Myers Lemons are less tart or sour than traditional lemons and to me they have a hint of thyme (Thymus sp.) aroma to their skins. This adds a more herbal flavor to the lemonade.
Using fresh squeezed juice gives a different flavor than frozen or bottled juice. All are acceptable to use in your lemonade but depending on how much time you have, might affect which one you choose.
I usually just make a 1-2 quarts at a time, so juicing enough lemons doesn’t take long. Just cut a few lemons and juice them using a hand-held juicer. I really like this one, because you can use it to collect juice and then just pour it out when it’s full. I don’t care for the pulp, so I pour the squeezed juice through a small sieve to remove the bits of pulp.
Simple Lemonade
1 cup juice
1 cup sugar
8 cups water
Mix juice and water together and then add sugar. Mix until sugar is dissolved. Serve over ice or chill in the refrigerator for 4 hours.
If you want to get fancy, warm 4 cups of water and add sugar and mix until dissolved. Let cool and then add rest of water and lemon juice. Serve over ice or chill in the refrigerator for 4 hours.
If the lemonade is too sweet, cut the sugar back to ¾ cup.
